No Bake Sweet Chocolate Energy Bites

I found myself craving some sugar (surprise, surprise), and these energy bites are a fabulously delicious and easy solution! I love no-bake recipes because they give you that raw crunchiness that disappears upon baking. I hope you enjoy them as much as I did!

Ingredients

1 cup (dry) oatmeal (I used old-fashioned oats)
1/3 cup unsweetened coconut flakes (can lightly toast if you’d like)
1/2 cup almond butter
1/2 cup ground flaxseed or wheat germ
1/2 cup chocolate chips
1/3 cup honey or maple syrup
1 Tbsp. chia seeds (optional)
1/4 cup dried cranberries (optional)
2 tbsp of Nutella (optional)

Directions

Stir all ingredients together in a medium bowl until thoroughly mixed. Make sure the mixture looks wet enough, or looks like you could roll it into a ball (aka doesn’t fall apart). If needed, you can add the 2 tbsp of Nutella (honey, peanut butter, almond butter, or maple syrup will also work). Mix again until it looks like it can be assembled into a ball. Note that refrigeration will also help with this.

Let chill in the refrigerator for 30 min. Once chilled, roll into balls of whatever size you would like. You can also make bars – I suggest lining whichever pan you use with wax paper for easy removal and clean-up. For bars, let chill again for 15 minutes before removing from pan and cutting. This will ensure it doesn’t fall apart.

When making both ball or bar shaped energy bites, be sure to really squeeze or press down so that it sticks together. The trick to no-bake is that you run into the danger of it falling to pieces!

Store in an airtight container and keep refrigerated for up to 1 week. They are stackable if you need to do so.
