What I love about the idea of starting a bakery is that “market research” is also known as “eating lots of food”. It’s an amazing revelation that I had last week. I’ll be trying out different bakeries in the Boston area, and hopefully around the East Coast in the coming months. I’ll be doing my eating at local bakeries, not chains like Panera, or the like.
